Thuringian rostbratwurst is protected throughout the EU. According to a European directive, these medium-grade sausages must measure at least 15-20 cm in length, be made with natural skins and have a strong, spicy flavour. The sausages are made from finely minced pork, plus sometimes lean veal or beef, flavoured with salt, pepper, caraway seeds, marjoram and garlic. The mix of spices varies according to the region. The ingredients are combined, stuffed into very fine pork casings and finally grilled over charcoal.

As legends tell, the South of Thuringia is the home of the potato dumpling. The recipe sounds easy but to prepare perfect dumplings it certainly needs some practice: Mix a quantity of raw grated potatoes with a quantity of boiled and mashed potatoes and fill the mixture with croutons. Shape the mixture into balls and simmer them in hot water for about 20 minutes. The result is a delicious accompaniment to every kind of roast. Enjoy your meal!
